Life can be overwhelming, filled with emotions that charge through me like a herd of wild stallions. I savor the rich, indulgent taste of beef cheek enchiladas and remind myself to cherish and support one another a little more. Cooking for each other is essential! Although I might not be a culinary expert—my knowledge is as limited as a cat's—I do know that I love the flavor of cotija cheese on my enchiladas.
