Claus Meyer, a Danish culinary visionary and co-founder of Noma, has ignited a gastronomic transformation in La Paz, Bolivia, with the launch of Gustu—a fine-dining restaurant and cooking school aimed at empowering underprivileged youth. Among the aspiring chefs are Kenzo, a skilled hunter from the Amazon, and Maria Claudia, who hails from the Andean altiplano.
